shoyu, umeboshi
vinegar, and
sea salt.
Ingredient Descriptions:
Tahini: a ground sesame seed product sometimes labeled sesame
butter. Sesame seeds are an excellent source of calcium and
iron.
Shoyu: a by-product, nascent of fermented soybeans and whole
wheat. Many times conventional brands of shoyu are unaturally
produced and labeled as soy-sauce. Shoyu is a flavorful
ingredient utilized in cooking
by macrobiotic
and health conscious chefs from Japan to the United States.
Umeboshi Vinegar: a type of vinegar derived from umeboshi
plums. The sweet umeboshi plum, close relative to the apricot
and rose, is marinated in a salt brine. The resulting p\roduct
after marination is pickled umeboshi plums. The plums are
ground to form umeboshi paste and the remaining liquid
is called umeboshi vinegar. This salty additive is helpful
in neutralizing acidic flavors and
conditions.
