Products: Tofu

The Bridge Tofu is created from organic soybeans and sea sea salt. These two ingredients combine to create an edible soy cake. Soy Curd has a mild but distinctive flavor, and allows for extreme versatility in the kitchen. Extra firm tofu (The Bridge Tofu) is a staple ingredient in everyday cooking for healthy vegetarians, vegans, and gourmets.
Ingredient Descriptions:
Soybeans: a highly nutritious vegetable, first cultivated in SE. Asia. They were only recently cultivated in the Americas and have become one of the most valued crops. At The Bridge we use only non-GMO (genetically modified organisms) soybeans.
Nigari: coagulant rich in minerals is a concentrated derivative of sea water or more specifically, sea sea salt. To create nigari, sea salt water is heated then boiled as the water evaporates, crystals form from the evaporation of mineral rich sea water. The crystals that appear are sea sea salt. This crystalline formation can be processed further or tumbled to form a smooth round product. This is packaged and labeled Nigari.
Tofu Nutrition: Tofu is packed with protein; containing many of the essential amino acids, it is low in saturated fats, and contains minimal unsaturated fats, and no cholesterol. Tofu contains vitamins A, C, B, as well as some of the essential minerals, including; magnesium, zinc, copper, iron, selenium and phosphorus.
